Girolle Mushrooms, Dried Online, Tasting of apricots, pepper, and a touch of nutmeg, this made chanterelle to always be a popular mushroom in the kitchen.

We’re a fan of simplicity: sauté them with butter, shallots, and then finish them off with a heavy pour of cream.

They grow at the top of Lozère trays and forests.

Cooking Tips :

As for all dry mushrooms, rehydrate your ceps in some water or some warm milk.

Recipe Risotto with dried chanterelle and white grapes:

Ingredients (4 people)

  • 200g of risotto
  • 40g of Champi Lozère dried Chanterelles
  • A little of parsley
  • 60g of Parmesan cheese
  • 1 onion
  • A soup spoon of olive oil
  • 1 litre of vegetable broth
  • 10cl of white wine
  • Dried fruits according to your taste
  • 20 cl of single cream

Preparation :

  1. Rehydrate your Chanterelles as indicated.
  2. Stir this mixture in a big very hot and oiled frying pan.
  3. Add the rice which you will make toast.
  4. Wet in the white wine and add 1/3 of the vegetable broth.
  5. Add Chanterelles and grapes.
  6. Mix and let cook by constantly mixing your preparation.
  7. It should take you approximately 45 minutes.
  8. Add the cream at the end of the cooking, mix and taste !!
